Local resident Prashant Sharan said he has always wanted to own his own business, and Wednesday, he celebrated the opening of his new venture: Hixson Pike Diner

"My friend said [to me], 'If you don’t chase your dreams, someone is going to hire you to chase his,'" Sharan said Wednesday morning at the event. 

He moved from Hawaii about a year ago and fell in love with Chattanooga. He said most people can't believe he prefers the local landscape to that of Hawaii, but he does. 

Sharan has taken over the spot that used to be Hillbilly's, located at 3514 Hixson Pike. 

About a dozen people, including representatives from the Chattanooga Area Chamber of Commerce, attended the grand opening Wednesday morning.

The business now has 10 employees, but Sharan said that will likely increase as the business grows. 

He likes the location and said the product and price points need to be right to do well, and he thinks he offers what customers want.

"Breakfast all day makes a lot of sense for this neighborhood," he said. "The concept is very simple. It's simple and great food with Southern hospitality. My price points are great."

The breakfast selection starts at $1.99. Lunch starts at $3.99 and dinner at $7.99.
