For more than two decades, he knew the name of his hypothetical business.

“My husband is the baker,” co-owner of a new Ooltewah business Carol Heath said. “He has worked in food service for over 25 years and the bakery has been his dream that whole time.”

Carol joked that it took her husband Danny Heath that entire time to get her onboard with the unique name—Bite Me Bakery. 


The duo had a soft opening of the 9408 Apison Pike bakery in January, and they are celebrating a grand opening Wednesday.

In its first few months in business have been solid, and most people are amused by the name, Carol said, although there are occasionally people who react negatively.

Danny is putting his years of experience into all the bakery’s products, which include wholesome breads, granolas, sweetbreads, sweet rolls, cookies and to order pies and cakes.

Everything is baked from scratch, and on Mondays the bakery goes gluten-free.

Vegan options and other specific products can be special-ordered.

“Danny likes to work with people with dietary restrictions,” Carol said.
